For over a century, the Di Ciommo family, owners of the company, have been involved in dairy cattle farming and the processing of the dairy products derived from it. The company is located in Lavello, Basilicata, in the province of Potenza, bordering the provinces of Bari and Foggia (Puglia). COLTURE

Our farm stands out for the autonomous production of forage, a crucial aspect to ensure quality control. We directly cultivate our 250 hectares of land, carefully monitoring each stage, from sowing to harvesting. This allows us to guarantee the quality of the final product, starting with carefully selected herbs and forages to meet the nutritional needs of our cows. Thanks to sustainable agricultural practices, we produce forage, ensuring a balanced and natural diet for our livestock. This way, we can guarantee milk of the highest quality, ready to be transformed into genuine cheeses and dairy products.

FARMING

Our livestock consists of over 2,000 Frisona and Jersey cattle, breeds known for their excellent production of high-quality milk. Every stage of their management is carefully monitored, ensuring the well-being of the animals through balanced nutrition, adequate space, and optimal living conditions. We firmly believe that good quality of life for our cows directly reflects on the quality of the milk produced.

The milk they produce is natural, wholesome, and easily digestible, qualities that are also found in the derived dairy products, such as fresh cheeses and dairy products. The Frisona breed is known for its high milk production, while the Jersey breed is recognized for the high fat and protein content in its milk. Together, they offer a raw material that excels in flavor and nutritional value.

Milk is not just the starting point but the result of careful agricultural and livestock management that includes meticulous care of the animals, autonomous forage production, and the adoption of sustainable practices. This synergy allows us to achieve an excellent, sustainable, and top-quality final product that reflects our commitment to responsible farming and genuine nutrition.

PROCESSING AND PRODUCTION

Immediately after milking, the milk is processed and transformed within our dairy, where tradition and technology meet to ensure products of the highest quality. The transformation process respects artisanal recipes passed down over time, but with the help of modern technologies that allow us to maintain high hygiene standards and food safety. Fresh milk, processed right after milking, retains all its nutritional and organoleptic properties, ensuring an authentic and genuine taste.

Our cheesemakers, with years of experience and mastery, create a wide range of dairy products, from fresh ones like ricotta and mozzarella to aged cheeses like Caciocavallo Silano DOP. The short and controlled supply chain allows us to preserve the quality of the milk from the moment of milking to the final product, ensuring freshness and flavor in every single creation.

Fresh products, such as mozzarella and ricotta, are primarily distributed in the provinces of Potenza, Matera, BAT, and Bari, where we can guarantee rapid and punctual deliveries to preserve the freshness of our dairy products. Thanks to an accurate distribution network and collaborations with local retailers, we are able to offer products that reach our customers’ tables with the same quality and freshness as when they were prepared.

Our specialties, such as Caciocavallo Silano DOP, go beyond regional and national borders, reaching international markets increasingly interested in the authentic flavors of Lucanian tradition. These aged cheeses, the result of a slow and natural process, embody the richness of our territory, with a perfect balance of texture, aroma, and flavor. Our commitment to enhancing Lucanian specialties allows us to spread local dairy traditions to an ever-wider and international audience, promoting the gastronomic culture of Our Territory.

Our company is also certified for its carbon footprint according to ISO 14064 standards, demonstrating our commitment to continuously monitoring and reducing our carbon footprint.
